250 grams Pasta (small wheel shape)
120 grams smoked Mozzarella (such as scamorza)
80 grams Salami
4 Tbsps Mayonnaise
1 tsp Mustard
lemons (juiced)
1 Tbsp Horseradish
1 Tbsp balsamic vinegar
1 Tbsp vegetable oil
2 bunches Arugula
salt
peppers

Preparation steps

1.

Prepare pasta according to package directions. Drain and reserve some of the cooking water.

Remove skin from salami and dice. Dice mozzarella cheese. Mix salami and cheese with pasta.

3.

Mix together mayonnaise, mustard, lemon juice, salt, pepper, vinegar, oil and horseradish. Add some pasta water. Stir in pasta and let sit for 30 minutes.

4.

Rinse arugula, shake dry and chop. Fold into pasta salad before serving.
