125 milliliters water
500 grams honey
200 grams whole-grain Oats
200 grams whole-grain Wheat flake
100 grams Shredded coconut
50 grams Sesame seeds
300 grams Dried Fruit (such as apricots, plums, apples, cranberries)
1 generous pinch Vanilla bean
1 tsp cinnamon
1 pinch salt
2 eggs (separated)

Preparation steps

1.

Heat water in a pot with honey and stir until honey has dissolved.

Meanwhile, mix rolled oats in a large bowl with wheat flakes, coconut and sesame seeds. Cut dried fruit into small cubes. Add dried fruit, vanilla paste and spices to the bowl and mix. Add honey water and two yolks, mix well and let rest for 10 minutes.

Preheat the oven to 140°C (approximately 275°F). Line a baking sheet with parchment paper.

Whip egg whites until stiff and fold into rolled oat mixture. Spread rolled oats evenly on the baking sheet. Cover with plastic wrap and press firmly with a rolling pin. Then remove the plastic wrap and slide baking sheet in the oven. Cook 20-30 minutes until golden brown and cut into bars while still hot. Serve cooled.
