125 grams Strawberries
125 grams Peaches

Preparation steps

Beat egg whites until stiff with lemon juice. Gradually sprinkle on sugar and continue beating until mixture is glossy and cut resistant. Fold in hazelnuts. Spread meringue on baking sheets lined with parchment paper following drawn templates measuring 24 cm (approximately 9 inches) in diameter. Bake in a preheated oven at 125°C (approximately 250°F) for 45-50 minutes. Leave oven door slightly open while baking. Remove and cool on a wire rack.

Whip the cream. Blanch peaches, shock, peel and cut in half. Remove pits and cut flesh into slices. Rinse strawberries, trim and cut in half. Spread cream on first meringue base and top with second meringue base. Spread on remaining cream and top with strawberries and peaches. Serve cake quickly.
