- 2 ripe Mangoes
- 4 Halibut fillet (each weighing about 160 g)
- salt
- freshly ground Black pepper
- 3 Limes (juice)
- 1 Tbsp butter
- 4 Tbsps Mango juice
- 1 tsp brown sugar
- 1 pinch cayenne pepper
- 1 Tbsp chopped cilantro
- 1 Lime
- 1 lemon
- cilantro (to garnish)

Preparation steps
1.
Peel the mangos, cut the flesh away from the pits and dice finely.
2.
Wash and dry the fish fillets, season with salt and pepper and sprinkle each fillet with 1 tablespoon lime juice. Broil the fish on both sides under a preheated broiler (or grill on a charcoal grill) for 5-6 minutes.

Heat the butter in a skillet and briefly saute the diced mango over a medium heat. Stir in the lime juice and mango juice and season to taste with salt, cayenne pepper and sugar. Add the chopped coriander.
4.
Thinly slice the lime and lemon.
5.
Put the fish onto plates with the mango-lime sauce and serve garnished with slices of lime and lemon and fresh coriander leaves.
