800 grams Halibut fillet
1 generous pinch Lemon peel
2 Tbsps lemon juice
4 Tbsps olive oil
2 sprigs rosemary
4 parsley
1 shallot
1 tsp Sea salt
freshly ground peppers
50 milliliters white wine
50 milliliters fish stock
rosemary (for garnish)

Preparation steps

Rinse halibut, pat dry and cut into four equal pieces.

Peel shallot and cut into small cubes. Rinse parsley, shake dry and finely chop. Pluck rosemary needles from branches and finely chop. Reserve some rosemary aside for garnish. Mix oil in a bowl with herbs, lemon zest, lemon juice, shallots, salt and pepper and marinate halibut fillets in the bowl. Cover the bowl and let rest for at least 10 minutes in the refrigerator. Preheat the oven to 175°C (approximately 350°F). Place fish fillets side by side in an ovenproof dish, pour white wine and broth over fish and cover (with lid or aluminum foil) and cook in the preheated oven for approximately 25 minutes.

Serve halibut immediately garnished with rosemary.
