- 3 cups Monkfish (trimmed and cut into 1-inch cubes)
- 3 cups Scallop (tough tendon removed)
- 2 sprigs fresh rosemary (leaves stripped)
- 1 clove garlic cloves (peeled and finely chopped)
- 6 Tbsps good-quality olive oil
- coarse salt (to taste)
- freshly ground peppers (to taste)
- 3 Tbsps balsamic vinegar
- 12 cherry Tomatoes
- 1 onion (peeled and cut into pieces)
Preparation steps

Place monkfish and scallops in a large bowl.

Chop rosemary leaves very fine. Place rosemary and chopped garlic in a small bowl add olive oil, mixing to combine. Pour oil mixture over monkfish and scallops, gently tossing to thoroughly coat. Let marinate for 15 minutes.

Prepare the grill for direct grilling. Preheat to medium-high heat.

Thread skewers with fish, scallops and vegetables. Season kebabs with salt and pepper. Arrange kebabs on a hot grate and grill for 2 to 3 minutes on all sides, or until fish is white and cooked through.
5.
Transfer kebabs to a serving platter. Drizzle with lemon juice and serve.
