500 grams King prawn (frozen, in the shell)
½ lemon (juiced)
1 Tbsp olive oil
3 sprigs Basil
3 sprigs Tarragon
2 egg yolks (hard boiled)
1 egg yolk (fresh)
1 Tbsp Caper
½ Tbsp White vinegar
½ Tbsp medium-hot Mustard
l olive oil
Sea salt
white peppers (freshly ground)
1 organic lemon
vegetable oil (for the pan)

Preparation steps

1.

For the sauce, rinse herbs, shake dry and finely chop. Drain capers and finely chop. Add three egg yolks, vinegar and mustard to a blender and puree. Gradually add olive oil and mix until smooth. Add herbs and capers add and season with salt and pepper.

Defrost prawns. Cut shell on the back and devein. Rinse shrimp gently pat dry with kitchen paper, sprinkle with lemon juice and season with salt.

Brush a baking sheet or grill pan with oil. Place prawns on pan and cook for 2 minutes on each side under a preheated oven broiler, watching carefully. Serve on plates with caper sauce and lemon wedges.
