16 slices Bacon

1 lemon
1 tsp honey
1 tsp spicy Mustard

Preparation steps

The grill heat up.

Rinse ribs and pat dry. Season with salt and pepper and brush with about 2 tablespoons of oil. Grill on a hot grill for about 25 minutes, turning often. 

3.

Rinse lettuce and cut into wedges. Wrap each wedge into sage leaf and bacon slice, secure with toothpicks.  

4.

Rinse and halve apricots, pit. Wrap each half into sage leaf and bacon slice, thread on wooden skewers.

5.

Squeeze lemon juice and whisk with honey, mustard and remaining oil. Season with salt and pepper.

6.

Drizzle lettuce and apricots with a little marinade and grill for about 8-10 minutes on a hot grill, turning often. 

7.

Cut ribs into portions and arrange with apricot skewers and lettuce on plates. Drizzle with remaining marinade and serve.
