2 Tbsps lemon juice

5 egg yolks
100 grams sugar
½ lemon (juice of)
200 milliliters dry white wine
mint (for garnish)

Preparation steps

Heat the grill.

Peel the pineapple thoroughly, then cut into 0.6 cm (approximately 1/4 inch) slices. Drizzle the pineapple slices with lemon juice and cook on the preheated grill on each side until golden brown. Drizzle occasionally with honey.

For the sabayon, beat the yolks with the sugar and lemon over a hot water bath until frothy. Gradually incorporate the white wine, and continue whisking until the mixture is thickened and fluffy.

4.

Transfer the pineapple slices to a plate. Top with the sabayon and garnish with the mint.
