The mango is the queen of provitamin A among fruits. This vitamin precursor supports the skin in cell renewal and thus provides us with beautiful and healthy skin. Pineapple scores with immune-strengthening vitamin C and minerals. It also contains a substance called bromelain. This is said to have many positive properties. For example, it is said to thin our blood and thus protect against thrombosis, heart attack and stroke.

 

To prepare the delicious skewers in a vegan version, you can replace the honey with maple or rice syrup and the yogurt with a yogurt alternative made from soy or coconut. When choosing the fruit, you can change the recipe to suit your own taste. For example, how about apricots, peaches or plums on the skewers?

3 Tbsps vegetable oil
1 Tbsp Agave syrup (or maple syrup)
2 Tbsps lemon juice
1 Passion fruit
6 ozs Yogurt (low-fat)
3 Tbsps Coconut cream
2 sprigs mint

Preparation steps

1.

Peel and halve papaya, scrape out seeds and cut into bite-sized pieces. Peel mango and cut pulp into bite-sized pieces. Peel pineapple, halve and remove hard core, cut into bite-sized pieces. Rinse and clean strawberries. Whisk oil with honey and lemon juice. Thread fruit on wooden skewers and brush with honey mixture. Grill on a hot grill for about 5-6 minutes, turning often. Brush with honey mixture often.

Prepare sauce. Halve passion fruit and scrape out pulp with seeds. Whisk with yogurt and coconut cream.

Rinse mint, shake dry, pluck off leaves and chop coarsely.

Remove skewers from the grill and sprinkle with mint. Serve with dipping sauce.
