- 80 grams Spinach
- 2 Red Bell pepper
- 1 Red onion
- 150 grams button Mushroom
- 8 slices Ciabatta
- 2 Tbsps olive oil
- 100 grams grated Cheese (such as Butter Cheese)
- salt

Preparation steps

Rinse the spinach well, pat dry and chop coarsely. Rinse the peppers, remove seeds and ribs and chop. Peel the onion and dice finely. Wipe the mushrooms with a paper towel and cut into slices.

Brush the bread slices with olive oil on both sides. Grill on a grill pan on one side until golden brown, 2 - 3 minutes. Then turn and sprinkle half of the slices with the cheese. After 2 - 3 minutes, when the cheese starts to melt, take everything out of the pan and place the cheese covered bread on a plate. Heat the mushrooms in the pan and spread on top of the cheese. Season with salt and pepper.

Top with the peppers, onions and spinach and finish with another slice of grilled bread. Cut each sandwich in half and serve immediately.
