1 ⅔ cups skim milk
3 tablespoons Corn starch
1 large egg
1 tablespoon sunflower oil
2 Broccoli (cut into strips)
2 zucchini (peeled and cut into batons)
4 sticks Celery (cut into batons)
2 Fennel bulb (sliced)
4 medium, skinless Chicken breasts
2 tablespoons Pine nuts

Preparation steps

1.
Preheat the oven to 180°C (160° fan) | 350F | gas 4. Whisk together the milk, cornflour, egg, sunflower oil, and plenty of seasoning in a small jug.

Pour into a baking dish. Scatter the vegetables on top and then sit the chicken breasts on top of the vegetables.
3.
Sprinkle over the pine nuts and plenty of seasoning. Bake for 35 - 40 minutes until the chicken is cooked through and the vegetables are tender.
4.
Remove from the oven and leave to rest briefly before serving.
