Green Vegetable Batter Pudding with Chicken
Preheat the oven to 180°C (160° fan) | 350F | gas 4. Whisk together the milk, cornflour, egg, sunflower oil, and plenty of seasoning in a small jug.
Pour into a baking dish. Scatter the vegetables on top and then sit the chicken breasts on top of the vegetables.
Sprinkle over the pine nuts and plenty of seasoning. Bake for 35 - 40 minutes until the chicken is cooked through and the vegetables are tender.
Remove from the oven and leave to rest briefly before serving.
