1 cup plain flour
1 tsp Baking powder
2 eggs
1 cup milk
3 Tbsps Lard
8 small Sausage (approx. 500 g)
1 small onion diced (optional)

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Sieve the flour, baking powder and salt into a mixing bowl. Create a well in the middle and add the eggs and a little milk to the well. Slowly mix everything together working from the middle outwards. Then stir in the remaining milk so that a liquid batter is created.

Heat the lard in a frying pan or oven-proof pot. Pierce the sausages and fry in the hot fat until golden brown. Remove the sausages from the pot and fry the onions in the meat juice if using. Pour the batter over the top and add the sausages.
4.
Bake for 20 to 25 min until the batter is golden brown and crispy. Serve hot.
