- 2 ½ ozs Quinoa
- 1 l Vegetable broth (from a jar)
- 2 Beefsteak tomato
- ½ Iceberg lettuce
- 1 Tbsp roasted Hazelnuts
- 3 Tbsps olive oil
- 2 Tbsps Fruit Vinegar
- 1 garlic clove
- Chili powder
- salt
- peppers
- 1 cilantro
- Peanuts (for garnishing)

Preparation steps
1.
Add quinoa to boiling broth, season with salt, cover and cook for 15 minutes. Drain in colander. Cut lettuce into strips. Rinse and dry tomatoes, cut into eighths. Chop nuts coarsely.
2.
Peel garlic and purée with oil and vinegar, season with salt and chili powder. Combine quinoa, lettuce, tomato, nuts and sauce in a bowl. Season with salt and pepper. Sprinkle with cilantro leaves and peanuts. Serve.
