For the asparagus
1 kilogram green Asparagus
½ Lime
1 Tbsp butter
1 tsp sugar
salt
white peppers
8 leaves Rice paper (soaked)
8 Lettuce
For the vinaigrette
1 Lime
4 Tbsps olive oil
2 Tbsps water
salt

Preparation steps

For the asparagus: Rinse the asparagus and remove the woody ends. Fill a large pot halfway with water. Squeeze the lime into the water, and stir in the butter, sugar and salt. Add the asparagus and bring to a boil. Cook until tender-crisp, about 10-12 minutes.Meanwhile, place the rice paper between 2 moist paper towels to soften. Rinse the lettuce leaves and put 1 on top of each rice paper sheet.

For the vinaigrette: Rinse lime in hot water, wipe dry and finely grate zest. Squeeze juice from lime. In a bowl, whisk the lime zest, lime juice, olive oil and water together until thoroughly combined. Season with salt and pepper to taste. 

For assembling: Remove the asparagus from the water and drain well. Arrage the asparagus op top of the rice paper sheets and drizzle with some of the vinaigrette. Fold the rice paper inward and then roll up. Place 2 rice paper rolls in a glass and garnish with fresh herbs if desired.
