7 ozs Spaghettini
6 Tbsps olive oil
2 white onions (finely chopped)
1 carrot (finely chopped)
1 garlic clove (finely chopped)
3 tsps Basil (chopped)
1 bay leaf
1 tin Tomatoes
23 ozs Lamb fillet
5 ozs Feta (cut into 8 slices)
1 tsp sugar

Preparation steps

1.
Cook the spaghettini in boiling salted water until al dente. Drain and rinse.
2.
Heat 2 tbsp oil in a pot and fry the onions, carrot and garlic. Add the basil, bay leaf and the tinned tomatoes. Bring to the boil and simmer for 20 minutes without a lid on.
3.
Remove the fat and tendons from the meat. Cut into eight pieces and season with salt and ground black pepper.
4.
Heat 2 tbsp oil in a pan and fry the meat on all sides for around 2-4 minutes. Place two slices of meat next to each other on a baking dish and top with two slices of feta. Do this with the remaining meat and cheese.
5.
Twist the spaghettini into four nests using a large fork and place one nest on each meat/cheese portion. Season with salt and ground black pepper and drizzle with the remaining oil. Grill for 4-5 minutes.
6.
Season the tomato sauce with salt, ground black pepper and sugar and arrange on plates with the spaghettini bake.
