Ingredients

For the tzatziki
½ Cucumber (diced)
1 clove garlic cloves (grated)
cup Greek yogurt
2 Tbsps Dill (roughly chopped)
For the meat
1 red chili pepper (chopped)
1 tsp tomato puree
1 tsp paprika
½ unwaxed lemon (juiced)
olive oil
4 Chicken breasts (skinned, ready to cook, 150 g each)
Plus
1 ⅔ cups cherry Tomatoes
Lettuce (to garnish)

Preparation steps

Preheat the grill to hot.

Season the cucumber with salt and leave to steep in water for around 10 min. Mix the garlic with a pinch of salt and add the yogurt and the dill. Stir in the cucumber and season with salt and ground black pepper. Chill until ready to serve.

Mix together the chilli, tomato puree, paprika, lemon juice and 4-5 tbsp olive oil and season with salt and ground black pepper. Brush the marinade onto the meat and grill on both sides until golden brown.
4.
Drizzle the tomatoes with olive oil and grill for 2 minutes. Season with salt and ground black pepper and arrange on plates with some lettuce. Serve with the chicken and the tzatziki.
