- For the lemon chicken
- 4 lemons (thickly sliced)
- 4 chicken joint
- 8 cloves garlic cloves (crushed)
- 2 Tbsps olive oil
- 1 Tbsp lemon juice
- 1 tsp salt
- 1 tsp peppers
- 1 Tbsp chopped mint
- 1 Tbsp chopped oregano
- For the tomato and sheep's cheese salad
- 1 tsp water
- ½ tsp white wine vinegar
- 1 pinch salt
- 1 pinch Black pepper
- 1 pinch oregano
- ¼ tsp Garlic paste
- 1 ½ Tbsps olive oil
- 4 large, ripe Tomatoes (thickly sliced)
- 1 ½ cups ripe sheep cheese (chopped)
- To garnish

Preparation steps
1.
For the lemon chicken: heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Place the lemon slices in a baking dish.
3.
Loosen the skin between from the chicken joints. Press 2 crushed garlic cloves between the skin and flesh into each chicken joint. Put the joints into the baking dish.

Drizzle the olive oil and lemon juice over the chicken. Sprinkle with salt and pepper and rub into the skin. Sprinkle the mint and oregano over the chicken.
5.
Bake for 35-45 minutes, until the juices run clear when the chicken is pricked with a fork.
6.
For the tomato and sheep's cheese salad: whisk together the water, vinegar, salt, pepper, oregano and garlic paste. Slowly drizzle in the olive oil, whisking constantly until thickened.
7.
Put the tomatoes and cheese into a salad bowl and drizzle with the dressing. Garnish with parsley.
8.
Put the chicken and lemon onto a serving plate and garnish with parsley.
