500 grams new, small potatoes
1 red onion
2 red paprika
3 Tomatoes
80 grams black Olives (pitted)
200 grams Cucumber
150 grams Feta
4 Tbsps olive oil
2 Tbsps White vinegar
salt
freshly ground peppers
2 Tbsps freshly chopped parsley

Preparation steps

1.

Rinse potatoes thoroughly and boil in salted water for about 20 minutes or until done.Cool slightly and cut into quarters. Peel onion and cut into strips.

2.

Rinse peppers, halve, remove seeds and ribs and cut into cubes. Rinse tomatoes, core and and cut into strips.

3.

Rinse, dry and chop cucumber.

4.

Mix all ingredients with olives, crumbled feta cheese, oil, vinegar and parsley. Season with salt and pepper. Place into small bowls and serve.
