- 6 sheets phyllo pastry (kept under a damp cloth)
- 35 ozs Salmon fillet (from the centre of the filet, skinned and boned)
- ½ cup fresh ginger
- 1 pinch ground cilantro
- 4 Tbsps olive oil
- salt
- bay leaves (to serve)

Preparation steps
1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Cut each sheet of pastry into 3 rectangles. Chop the filet of salmon into 18 even slices.
3.
Peel the ginger and grate very finely.
4.
Place a slice of salmon at the end of each strip of pastry. Add salt, a pinch of grated ginger, and a little coriander. Fold the ends of the pastry inwards over the filling, and then roll tightly.
5.
Place the rolls on a sheet of greaseproof pager. Brush with oil and transfer to the oven. Bake for about 15 minutes turning half way through. The pastry should be golden.
6.
Serve immediately with a rocket salad.
