- 1 ½ Tbsps Avocado oil
- 4 small, skinless Chicken breasts
- ½ cup gluten-free chicken stock
- 1 Orange (juiced)
- 1 Tbsp honey
- 4 cups Snap pea
- 1 Tbsp black Poppy seeds
- 3 cups cooked Brown rice
- 2 Tbsps sliced almonds
- 1 Tbsp mint (finely chopped)

Preparation steps
1.
Flatten the chicken breasts between two sheets of clingfilm using a rolling pin or meat tenderiser.
2.
Heat the oil in a saute pan set over a moderate heat until hot. Season the chicken breasts and sear in the oil until golden on both sides.

Deglaze the pan with the stock and orange juice, stirring well to dislodge any pieces stuck to the pan.

Stir in the honey and continue to cook the chicken over a reduced heat, turning occasionally, until cooked through; 6 - 8 minutes.

Set the chicken aside when ready, seasoning the sauce with salt and pepper.

Blanch the mange tout in a large saucepan of salted, boiling water for 2 minutes. Drain and toss with the poppy seeds, salt, and pepper.
7.
Reheat the rice in a microwave if necessary. Divide between plates and top with the mange tout. Serve the chicken and sauce alongside, garnished with flaked almonds and chopped mint.
