- 1 ½ cups Basmati rice
- 2 Tbsps sesame oil
- 5 ⅓ cups Chicken breasts (cut into bite-sized pieces)
- ½ cup Rice wine
- 3 Tbsps Plum sauce
- 2 Tbsps Hoisin sauce
- 1 Tbsp Chili sauce
- Vietnamese balm (to garnish)

Preparation steps
1.
Cook the rice in twice the volume of salted water for around 20 minutes until done.
2.
Heat the oil in a wok and briefly stir fry the chicken. Add the rice wine and stir in the plum sauce. Add hoisin and chilli sauce to taste.
3.
Stir fry for around 2-3 minutes until cooked then divide between bowls. Garnish with balm and serve the rice in a bowl on the side.
