Ingredients

For the steaks
2 rump Steak

1 Tbsp butter
1 Tbsp Heather honey
For the potatoes
3 cups waxy potatoes (peeled and sliced)
2 Tbsps Goose fat (or olive oil)
1 clove garlic cloves
salt
peppers
½ bunch parsley (chopped)

Preparation steps

1.
Heat the fat in a large frying pan and add the potato slices and garlic. Season and cook over a low heat until golden and crusty, 8-10 minutes.
2.
Season the steaks and rub with oil. Heat a frying pan and sear the steaks on each side for 2 minutes.
3.
Add the butter to the pan and then the honey. Baste the steaks as they cook for 2 minutes more, then remove from the pan and rest for 5 minutes.
4.
Serve the steak with the potatoes alongside.
