2 Tbsps Caper
1 cup Yogurt (0.1% fat)
150 grams Mayonnaise (from a jar)
juice of lemons
1 Tbsp Curry powder
salt (and pepper and Tabasco)
Beet Greens (for garnish)

Preparation steps

1.

Peel pineapple, quarter, cut out the hard core. Peel eggs and cut into quarters. Cut pineapple into thin pins and add with the shrimp and capers to the eggs in a bowl. Stir in yogurt, mayonnaise and lemon juice.

2.

Add curry powder, season with salt, pepper and Tabasco to taste and garnish with beet greens.
