The fruit in this delicious summertime dish packs a punch of vitamins, while the pistachios add heart-healthy fats.
If you don't like pistachios, you can always make the cream with almonds or no nuts at all.

Ingredients

- For Dip
- ¾ cup Pistachio (shelled and finely chopped)
- 1 Vanilla bean (seeds scrapped out)
- 1 ¼ cups Mascarpone
- 1 Tbsp Grand Marnier
- 3 Tbsps Orange juice
- 2 Tbsps Lime juice
- 5 Tbsps powdered sugar
- ½ cup heavy cream (whipped)
- For Kebabs
- 2 ½ cups mixed Melon (such as cantaloupe, honeydew and watermelon)
- 20 Strawberries (washed and trimmed)
- 4 small, ripe Nectarine (washed and cut into wedges)
- 10 wooden Skewer
Preparation steps

In a medium bowl, combine pistachios, vanilla seeds, mascarpone cheese, Grand Marnier, orange juice, lime juice and confectioners' sugar, stirring to incorporate. Fold in the whipped cream. Refrigerate until ready to use.

Cut the melon into bite-size pieces. Thread fruit onto wooden skewers and serve with chilled dip.
