Fruit Skewers with Pistachio Mascarpone Cream

Pistachio (shelled and finely chopped)
Vanilla pod (seeds scrapped out)
- 1 ¼ cups

- ½ cup
heavy cream (whipped)
In a medium bowl, combine pistachios, vanilla seeds, mascarpone cheese, Grand Marnier, orange juice, lime juice and confectioners' sugar, stirring to incorporate. Fold in the whipped cream. Refrigerate until ready to use.
Cut the melon into bite-size pieces. Thread fruit onto wooden skewers and serve with chilled dip.
