3 Tbsps Raspberry vinegar

4 handfuls young Lettuce (such as, lettuce, arugula, Chicorreé, Oakleaf)

Preparation steps

1.

Preheat the oven to 200°C (approximately 400ºF).

Rinse the blueberries and pat dry. Set about half aside for the garnish and purée the rest with the olive oil, vinegar and honey. Season with salt and pepper.

Cut the goats cheese into 2 cm thick slices (approximately 3/4 inch) and place them on a baking sheet lined with parchment paper. Broil for about 3 minutes.

4.

Rinse and trim the lettuce and shake dry. Arrange in four bowls decoratively and distribute the baked goats cheese on top.

Drizzle with the dressing and serve garnished with blueberries. Serve with white bread if desired.
