Ingredients

For the shortcrust dough
0.333 cup sugar
cup butter
2 cups plain flour
1 egg
For the topping
3 ½ cups low-fat Quark
¾ cup sugar
4 eggs (separated)
1 organic lemon (juiced, zest grated)
4 Tbsps lemon juice
0.333 cup butter
¼ cup Corn starch
1 tsp Baking powder
½ cup Semolina
2 jars Cherries (drained)

Preparation steps

1.
To make the shortcrust dough quickly knead all the ingredients together, wrap in cling film and chill for 30 min.
2.
Heat the oven to 175°C (155°C in a fan oven), 350°F, gas 4 and grease a baking tray.
3.
Roll the dough out onto the prepared baking tray and bake for 15 min. Remove from the oven and turn the temperature up to 200°C (180°C in a fan oven), 400°F, gas 6.

To make the topping mix together the quark, sugar, egg yolks, lemon zest and the juice. Melt the butter and fold it in.
5.
Mix together the corn flour, baking powder and the semolina and fold into the quark mixture. Beat the egg whites until stiff, fold into the quark mixture and spread onto the cake.
6.
Arrange the cherries on top pressing them in gently. Bake for around 35 min, leave to cool and serve in slices.
