- 2 sheets refrigerated pie dough (9-inch)
- 1 egg (beaten)
- 1 pkg lemon sugar-free pudding
- 2 cups skim milk
- 1 ½ cups fresh Blueberries
- powdered sugar
- lemon zest

Preparation steps

Preheat oven to 375 degrees F.

Roll out the pie dough. Using a sharp knife, cut the dough into approximately 3” square pieces and place on a baking sheet that has been lightly sprayed with cooking spray. Using pastry brush, brush each pastry square lightly with egg. Bake between 5-7 minutes or until golden brown. Remove and allow squares to cool on a rack.

Meanwhile, prepare lemon pudding with milk according to package instructions.

Top each square with a spoonful of lemon pudding and fresh blueberries. Garnish with lemon zest and sprinkle with powdered sugar. Serve immediately or chill until ready to serve.
