4 Nectarine
40 grams Hazelnuts
4 egg whites
4 egg yolks
50 grams sugar
1 tsp lemon juice
400 grams Cream quark (40% fat)
50 grams Whipped cream
20 grams Pastry flour
butter (for the pan)

Preparation steps

1.

Rinse and pat dry fruit. Halve strawberries, halve and pit nectarines, cut into wedges.

Beat egg whites until very stiff. Butter four ramekins. Whisk lemon juice with quark, cream and flour. Whisk egg yolks with sugar, fold into cream mixture and add fruit and hazelnuts. Fold in egg whites. Pour mixture into ramekins and bake in preheated oven at 180°C (approximately 350°F) for about 25 minutes. Remove from oven and cool. Serve.
