6 ½ cups Pear (peeled, cored and chopped)
1 lemon (juice)
1 ¾ cups sugar
1 cup plain Dark chocolate (70% cocoa solids, broken)

Preparation steps

1.
Mix together the pears and lemon juice. Put into a large pan with the sugar.
2.
Heat gently until the sugar has dissolved, then simmer until the fruit is soft, stirring occasionally.
3.
Stir in the chocolate and simmer very gently, stirring, until the chocolate has melted and is well blended.
4.
Spoon into hot sterilised jars, cover, seal and label. Store in the refrigerator.
