Red Fruit Compote

Mix the pomegranate seeds, lemon juice and the sugar and leave to steep for 3-4 hours.
Stir in the cherry juice, bring to the boil and allow to bubble for around 4 min.
Transfer to sterilised jars, screw tightly closed and stand upside down for 10 min. Leave to cool, turn the right way up and store in a cool, dark place.
