Stored in a cool, dry place the relish will keep for at least 2 months.
Place all the ingredients, apart from the pepper, into a pot and bring to the boil.
Simmer for around 15 min, stirring occasionally until the mixture thickens. Season with salt and cayenne pepper and transfer to sterilised jars. Close tightly and leave to cool.
