1 chopped garlic clove
200 grams green Asparagus
2 Tbsps butter
2 Tbsps soy sauce
100 grams cooked Chicken breasts
1 Tbsp chopped cilantro

1 egg white
10 sheets 12 x 12 cm Spring roll dough sheet (approximately 4 1/2 x 4 1/2 inches)

Preparation steps

1.

Peel the bottom third of the asparagus, trim the ends and cut into thin slices. Sauté the asparagus in a pan with butter, ginger, and garlic over low heat for about 5 minutes. Deglaze with soy sauce and allow to cool.

Dice the chicken breast and combine with asparagus mixture, cilantro, and pepper.

Set out the spring roll sheets next to each other. Brush edges with beaten egg white. Place some filling in the center of each sheet. Fold the bottom and sides up over the filling then roll the sheet until sealed. Heat oil to 160°C (approximately 325°F) and fry the rolls until golden brown, about 4 minutes.

Drain on paper towels and serve immediately, with chile pepper sauce if desired.
