100 grams Pastry flour
100 grams Wheat starch
2 egg whites
½ tsp salt
freshly ground peppers
1 l vegetable oil (for frying)
200 grams white fish fillets ready to cook, skinless (such as cod)
1 Fennel
250 grams King prawn (deveined and peeled down to the tail segment)
150 grams Surimi

Preparation steps

1.

Mix flour with wheat starch in a bowl. Add egg whites and season with salt and pepper. Quickly whisk flour mixture together. Add approximately 300 ml (approximately 10 ounces) cold water all at once and mix into a smooth batter.

Heat oil in a pan or in a deep fryer to about 170°C (approximately 350°F).

Rinse fish, pat dry and cut into bite-size pieces. Rinse fennel, trim and cut into thin slices. Rinse prawn and surimi and pat dry.

4.

Pull fennel and seafood, in portions, through batter until covered. Fry in portions in hot oil for 3-4 minutes until golden brown. Drain on paper towel and serve.
