- For the mulled wine
- 4 cups light Red wine
- ⅜ cup Port wine
- 1 organic Orange (zest grated)
- 4 cloves
- 1 Cinnamon stick
- 1 tsp Cardamom
- 1 Star anise
- 1 pc fresh ginger (approx. 1.5 cm, peeled and sliced)

- 4 Oranges (pierced with cloves and star anise)
Preparation steps

To make the mulled wine place the wine, port, orange zest, spices and the ginger in a pot and heat until it almost boils. Do not allow to boil but simmer for 10-15 min.

To make the batter, mix together 200 g flour, the eggs, egg yolk, 350 ml cold water and a pinch of salt and leave to rest for around 15 min.

Heat a deep-fryer to 180°C | 350F. Dust the scampis in the remaining flour and drag through the batter. Fry in the deep fryer and then remove with a draining spoon. Skewer onto sticks.

Sieve the mulled wine into four glasses and serve garnished with the orange slices.
