1 kaiser roll (from the day before)

100 grams grated Parmesan
100 grams breadcrumbs
1 bunch parsley
1 Pickled cucumber
1 Tbsp Caper
4 Tbsps Pastry flour

Preparation steps

1.

Rinse, trim and cook the radicchio for 10 minutes in boiling salted water. Drain, chop and puree.

2.

Soak the bread in the hot milk, squeeze and mix with the eggs, parmesan and breadcrumbs.

3.

Mix in the radicchio. Finely chop the capers, pickle and parsley, stir and season with salt and pepper.

4.

Shape into walnut-sized balls, roll in flour and fry in hot oil until it floats. Drain on paper towels.
