250 grams day-old Toast
2 handfuls mint (around 50 grams) (approximately 2 ounces)
3 eggs
150 grams freshly grated Parmesan
150 grams Feta
salt
freshly ground peppers
vegetable oil (for frying)

Preparation steps

Cut the crusts off the bread, coarsely chop and soak in lukewarm water for about 15 minutes. Squeeze out the excess water and break into pieces. Rinse the mint, pat dry and finely chop the leaves. Mix into the bread along with the eggs and Parmesan. Drain the feta cheese, crumble coarsely and mix into the bread mixture. Season with salt and pepper, cover and chill for at least 3 hours in the refrigerator.

Shape the mixture into small balls and deep-fry in the oil until golden brown, around 3-4 minutes. Drain on paper towels then serve.
