1 Tbsp butter
1 Tbsp vegetable oil
1 bunch Chives
1 kilogram waxy potatoes
2 grams clarified butter
4 slices Bacon
salt (pepper)

Preparation steps

1.

Scrub potatoes and cook in salted water for 20 minutes the day before. Next day, peel and slice thinly. Heat clarified butter in a heavy pan and cook potato slices on high heat, turning often, until golden brown.

In another pan, heat oil and carefullly add broken eggs, cook slowly. Rinse and dry chives, cut into rings. Place potatoes into preheated oven at 70°C (approximately 150°F) to keep warm. In the same pan, brown bacon until crispy Arrange potatoes, eggs and bacon on plates and sprinkle with chives. Season with salt and pepper and serve.
