800 grams waxy potatoes (prepared the day before)
80 grams marbled Bacon (thin slices)
2 Tbsps butter
4 eggs
salt
peppers (as desired)

Preparation steps

1.

Peel the potatoes and cut into 1-1.5 cm (approximately 1/3-2/3 inch) thick slices. Fry the bacon in a pan until crispy, then drain on paper towels. Saute the potatoes in a pan with 1 tablespoon of butter for 3-5 minutes.

In another nonstick pan, crack the eggs and fry in the remaining butter, Serve the fried eggs hot on plates with the potatoes and bacon. Season with salt and pepper as desired.
