8 White rolls
100 milliliters milk
100 milliliters Whipped cream
4 eggs
250 grams aged Mountain cheese
2 pcs onions
2 cooked potatoes
salt
freshly ground peppers
1 bunch Wild garlic
3 Tbsps Pastry flour
2 Tbsps butter

Preparation steps

Peel onions and cut into small cubes. Heat butter in a pan and saute onions. Rinse wild garlic and shake dry. Set aside few sprigs for garnishing, chop the rest. Peel potatoes and grate finely, mix with flour.

Crumble bread in the food processor. Cut cheese into very small cubes. Combine eggs with onions, cheese, potatoes, herbs and spices and breadcrumbs and quickly process into a dough. Add cream and mix well, add as much milk as needed to make malleable dough. Shape little balls out of dough. Heat oil to 175°C (approximatley 347°F) and cook cheese balls, few at a time, until golden brown. Drain on paper towels.

Arrange on warmed plates and garnish with with fresh wild garlic. Serve.
