You can serve this as an appetizer or as a light meal. If you want it to be a bit more filling, add some prosciutto or grilled chicken.

- 2 ripe, red Tomatoes (washed; cored and cut into wedges)
- 2 ripe, green Tomatoes (cored and cut into wedges)
- 1 Cucumber (peeled and diced)
- 6 firm, ripe Figs (cut into wedges)
- ½ cup fresh Basil (hand torn)
- 1 small Red onion (thinly sliced)
- kosher salt (to taste)
- freshly ground Black pepper
- 3 Tbsps extra virgin olive oil
- 1 Tbsp Red wine vinegar
- ¼ cup Goat cheese (or feta)
- 1 loaf Flat Bread
Preparation steps

Combine tomatoes, cucumber, figs, basil leaves and sliced onion in a large bowl. Season with salt and pepper.

In a small bowl whisk the oil and vinegar together. Pour over the top of the salad. Toss gently to incorporate ingredients. Crumble in the cheese and toss again.

Arrange on individual serving plates. Serve at room temperature with Sardinian bread or a crispy bread of your choosing..
