3.333 cups flour
1 cube Yeast
1 pinch sugar
1 cup lukewarm water
½ tsp salt
3 Tbsps olive oil
For the topping
cup fresh Goat cheese (or sheep's cheese)
2 Tbsps lemon juice
White pepper
freshly ground peppers
salt
2 Tbsps rosemary
3 cooked potatoes (cooked the previous day)

1 Cutting board, 1 Small knife, 1 Large knife, 1 Can opener, 1 große rechteckige Casserole dish (40 x 20 cm), 1 Wooden spoon, 1 Teaspoon, 1 Measuring cups, 1 Pot mit Deckel, 1 Paper towel

Preparation steps

Mix the yeast and sugar smoothly in the lukewarm water. Put the flour into a mixing bowl with the salt and oil, add the dissolved yeast and knead thoroughly using the dough hook of your mixer until the dough comes away from the sides of the bowl. Cover and put in a warm place to rise for about 45 minutes.

Then knock back the dough (knead again) on a floured work surface and roll out thinly.

Using a knife or a pastry wheel cut out 8 leaf-shaped pieces approximately 12 cm long. Make the pieces a little thinner in the middle than at the edges. Place on a baking tray lined with baking parchment.

Mix the fresh cheese with the lemon juice, salt and white pepper and spread thinly on the flatbreads. Peel and thinly slice the potatoes and arrange on top of the cheese. Slice the cheese log and add a few slices to each flatbread. Scatter with rosemary leaves. Sprinkle with freshly ground pepper and bake in a preheated oven (220°, middle shelf) for about 15 minutes, until golden brown.
