Preparation steps

1.

For the dough, combine yeast and sugar in 250 ml (approximately 1 cup) of warm water and knead with flour, 1 teaspoon salt and 5 tablespoons of olive oil into a smooth dough. Cover and let rest for about 1 hour in a warm, draft-free place. Knead dough and leave to rise again for 30-40 minutes.

2.

Meanwhile, peel onions and cut into rings. Rinse tomatoes, remove stems and slice. Also cut mozzarella into slices.

3.

Rinse chili peppers, cut in half lengthwise, remove seeds and finely chop. Cut ham into strips.

4.

Line 2 baking sheets with parchment paper. Sprinkle work surface with plenty of flour and divide dough into 16 equal pieces. Roll out with a rolling pin, lay on the sheets and flatten evenly with hands, leaving the edge thicker. Brush dough with remaining olive oil.

5.

Distribute onion rings onto dough. Top with tomatoes, sprinkle with ham and chili and finish with mozzarella. Season with salt and pepper and bake in preheated oven at 200°C (fan oven 180°C; gas mark 3) (approximately 400°F) until golden brown in 15-20 minutes.

6.

Meanwhile rinse basil, shake dry and pluck leaves. Sprinkle cooked pizzas with basil and serve.
