Mix yeast with 200 ml (approximately 3/4 cup) of warm water. Mix the flour with the salt in a bowl. Add the dissolved yeast and the olive oil to the flour and knead with the dough hook of the electric hand mixer to a smooth dough, adding a little flour or water if necessary. Cover and let rise in a warm place for about 45 minutes.
Knead the dough again by hand by on a floured work surface and divide into 6 portions. Roll each portion into a round flatbread. Place on a greased baking sheet. Cover and let rise for another 15 minutes. Then bake on the center rack in a preheated oven at 200°C (approximately 400°F) for about 25 minutes.
