4 fish fillets (such as lake salmon)(each about 150 grams)
1 Tbsp lemon juice

40 grams slivered almonds
20 grams ground almonds
1 egg yolk
½ tsp dried Sage
1 generous pinch lemon zest
4 leaves Sage

Preparation steps

1.

Preheat the oven to 200°C (approximately 375°F) top and bottom heat and place parchment paper on a baking sheet.

Rinse the fish fillets, pat dry and place on the baking sheet. Season with a bit of lemon juice and a little salt and pepper. Crush the sliced almonds with a rolling pin. Mix the ground almonds with the egg yolks, the dried sage and lemon zest and season with salt, pepper and the remaining lemon juice. Spread the mixture on the fish fillets and sprinkle the crushed sliced almonds on it. Bake in the oven for about 20 minutes.

Rinse the sage leaves and shake dry. Place one leaf on each of the fillets and serve with lemon wedges.
