Preparation steps
1.
Whisk lemon juice with sugar and walnut oil to make a dressing. Season with salt and pepper. Soak raisins in the black tea for 20 minutes.
2.
Peel carrots and rinse the summer squash. Grate vegetables on a box grater or mandoline and mix with the dressing. Add the drained raisins and almonds and stir to combine.
3.
Rinse the chives, shake dry and cut into small rings. Arrange the vegetable salad on plates and sprinkle with the chives before serving.
