- For the vinaigrette
- 2 Tbsps apple cider vinegar
- 1 Tbsp lemon juice
- 1 tsp spicy Mustard
- 1 tsp honey
- 5 Tbsps olive oil
- salt
- freshly ground peppers
- For the salad
- 2 Fennel bulb
- 60 grams peeled Walnut
- 1 ½ bunches red Arugula
- 2 Apple (such as Boskop)
- 300 grams Smoked trout

Preparation steps

Mix the vinegar, lemon juice, and honey. Gradually incorporate the oil, and season to taste with salt and pepper.

Rinse, trim, and halve the fennel. Remove the hard core, and julienne. Toast the walnuts in a dry pan until fragrant. Remove from the heat, let cool, and coarsely chop. Rinse and dry the arugula. Rinse and quarter the apples. Remove the core and thinly slice. Mix the apples, fennel, arugula, and the vinaigrette. Transfer the salad onto plates. Cut the fish into large pieces, and place on top of the salad. Sprinkle with nuts and freshly cracked black pepper, and serve.
