- For the salad
- 2 cups Fava bean (shelled)
- 3 cups baby Spinach (washed)
- 2 cups cherry Tomatoes (halved)
- 1 ½ cups salad Radish (thinly sliced)
- 1 small Red onion (finely sliced)
- ½ cup reduced-fat, soft vegan cheese (crumbled)
- 1 handful Basil
- salt
- freshly ground peppers

Preparation steps
1.
For the dressing: Whisk together the olive oil, water, lemon juice, and seasoning in a large mixing bowl.

For the salad: Blanch the fava beans in a large saucepan of salted, boiling water for 2 minutes. Drain well and refresh in iced water.
3.
Drain the fava beans again and pat dry. Add to the bowl of dressing along with the spinach, cherry tomatoes, radishes, and red onion. Toss well to coat and season to taste with salt and pepper.
4.
Spoon onto a serving platter and top with the crumbled cheese and basil leaves.
