250 grams broad Beans (fresh or frozen)
1 bunch Radish
150 grams mixed Lettuce (such as radicchio, arugula, chicory)
200 grams Feta
50 milliliters Beef broth
1 Tbsp Mustard
2 Tbsps Red wine vinegar
1 Tbsp balsamic vinegar
salt
freshly ground peppers
1 pinch sugar
4 Tbsps olive oil

Preparation steps

1.

Blanch the broad beans in boiling salted water for about 5 minutes if using frozen beans and 2-3 minutes if using fresh. Drain well.

Rinse the radishes and cut into quarters.

Cut the feta cheese into cubes. 

4.

Rinse the lettuce, spin dry and cut into strips. 

5.

Whisk the beef broth with the mustard, red wine vinegar, balsamic vinegar and olive oil and season to taste with salt, pepper and sugar. 

6.

Combine the broad beans, radishes, lettuce and feta cheese in a large bowl, drizzle with the dressing and mix well. Let stand for about 30 minutes before serving.
