1 For the mango lassi: put all the ingredients into a blender or food processor and blend for 2 minutes until smooth. Pour into individual glasses and chill until ready to serve.
2 For the pineapple: whisk together the honey and lime juice in a wide shallow bowl. Add the pineapple slices, cover and leave to stand for 2-4 hours.
3 For the mint sugar: put the sugar and mint in a food processor or blender and blend until combined.
4 Attach 2 pineapple slices together with cocktail sticks and sprinkle with the mint sugar. Serve with the lassi and decorate with mint leaves.
