For the mango lassi
16 ozs Soy yogurt
1 cup Soy milk
2 Mangoes (peeled & stones removed)
sugar (to taste)
For the pineapple
4 ozs clear honey
¼ cup Lime juice
8 Pineapple
For the mint sugar
½ cup sugar
2 Tbsps mint
To decorate

Preparation steps

1.
For the mango lassi: put all the ingredients into a blender or food processor and blend for 2 minutes until smooth. Pour into individual glasses and chill until ready to serve.

For the pineapple: whisk together the honey and lime juice in a wide shallow bowl. Add the pineapple slices, cover and leave to stand for 2-4 hours.
3.
For the mint sugar: put the sugar and mint in a food processor or blender and blend until combined.

Attach 2 pineapple slices together with cocktail sticks and sprinkle with the mint sugar. Serve with the lassi and decorate with mint leaves.
